Pistachio Cheesecake

Made two of these for St. Paddys (froze one) and it turned out great....was worried since I included 2 small boxes of Pistachio Jello pudding in this cheesecake instead of food coloring.   Had the Pistachio nuts to make the real pudding thing but it would have taken much longer in kitchen.   Recipe came from Ladybehindthecurtain site.    I substituted all purpose flour with cake flour (preferred) if on hand, if not, I sift my measured all purpose flour 3 - 4 times and I always double up on the crust recipe...seems there is never enough.   Always when possible use fresh eggs.Dont forget to put parchment paper on the bottom so you can remove easily from springform pan & bottom.
