Cooking Venison
Does anyone have some tips and tricks on cooking venison, or good marinades?My Hubby got his first deer whilst out hunting last week and I now have a freezer full of venison and no idea how to cook it.
I have researched a bit on it, but thought asking here wouldnt hurt also :)
Many thanks! If you cook it too much, it will end up tough and taste a bit like liver as it is a very lean piece of meat and dries out easily. My favorite way to cook venison backstrap, for example: season with salt and garlic, place in a covered cast iron roasting dish, bake in a very cool oven (about 110C) until the thickest portion of the meat registers as medium-rare (30-45 minutes). I also love to use it in chili. Very tasty! Oh man, Im jealous! I dont know how to cook it, but no meat is better!
