Here are some sample of fabrics and I hope it helps you to get some idea:
1. 32ct Lugana 2 over 2

2. 25 ct Dublin Linen 1 over 1

3. 28 ct Lugana 1 over 1

4. 36 ct. Edinbourgh Linen 2 over 2

In Malaysia, Aida fabric is commonly sold, very difficult to get fabric such as Linen.
I do hope to try stitching on Linen....

I have some Lugana and linen in stock, but never thought about stitching on them 1 over 1. It will kill my eyes:Q
