Ingredients:
1 unsprayed lemon 40 g sugar ( 4 tablespoons ) 250 g „Quark“ (alternatively cream cheese) 200 g whipped cream 100 g cookies 250g raspberries 150 g Lemon Curd
Grate the peel of the lemon and squeeze the juice, then mix lemon rind, 3 tablespoons sugar , Quark (cream cheese) and 2 tablespoons lemon juice. Then whip the cream till it is stiff and fold into the quark (cream cheese) mass.
Mix the remaining lemon juice with 4 tablespoons water and 1 tablespoon sugar to a syrup.
Fill a bowl with half the cookies, spread with half of the lemon syrup and cover it with 1/3 of the cream. Then place the remaining cookies on it and soak it with the rest of the lemon syrup , then layer alternating cream , raspberries and lemon curd.
I made only 2 layers. Then pu all at least for 2 hours in the refrigerator. Done.
