Spinach and cheese stuffed manicotti

Have not made in several years, but my husband loved it, and my son who does not do spinach, ate all the leftovers. But he loves pasta, i.e. lasagna. Not able to deal, because my son leaves for Texas today for the military basic training. Can't stop crying

I would love your mannicotti.  I've never had spinach added.   My spouse only make a cheese and garlic filling.   You son will do well in the military mom.  Plus, they have good benefits.

Just had to laugh about the not liking spinach but eating it all up!  I know what that is like.  Hope basic training goes well.  It's hard when they grow up and leave home.
