Instructions:
  • Prepare the Ingredients:

    • Dice the pork and liver into small, uniform cubes. Prepare the vegetables: chop the onions and garlic, and dice the carrots, potatoes, and bell pepper.
  • Sauté the Aromatics:

    • In a large pot, heat the cooking oil over medium heat. Add the minced garlic and chopped onions, sautéing until fragrant and the onions are translucent.
  • Cook the Pork:

    • Add the diced pork to the pot and cook until browned. Stir occasionally to ensure even cooking.
  • Add the Tomato Sauce:

    • Pour in the tomato sauce and tomato paste (if using). Stir to coat the pork evenly. Cook for about 5 minutes to let the flavors meld.
  • Add Seasoning:

    • Pour in the soy sauce, and add the bay leaves, sugar (if using), and vinegar (if using). Season with salt and pepper to taste. Stir well.
  • Simmer:

    • Add enough water or broth to cover the meat. Bring to a boil, then reduce the heat to low. Cover and simmer for about 30-40 minutes or until the pork is tender.
  • Add the Liver:

    • Once the pork is tender, gently fold in the diced pork liver. Cook for an additional 5-10 minutes until the liver is cooked through.
  • Add Vegetables:

    • Stir in the diced carrots, potatoes, bell pepper, and green peas. Continue to cook until the vegetables are tender, about 10 minutes. Adjust the seasoning if needed.
  • Serve:

    • Once everything is cooked and flavors are well combined, remove from heat. Serve hot with steamed rice.
