Instructions:
  • Sauté Aromatics:

    • In a large pot or skillet, heat the cooking oil over medium heat. Add the minced garlic and chopped onion. Sauté until fragrant and the onion becomes translucent.
  • Brown the Chicken:

    • Add the chicken pieces to the pot and cook until they are browned on all sides. This helps to seal in the flavor.
  • Add Tomato Sauce:

    • Pour in the tomato sauce and stir to coat the chicken evenly. Cook for about 5 minutes, allowing the sauce to meld with the meat.
  • Add Seasoning:

    • Add water or chicken broth, soy sauce (if using), bay leaves, salt, and pepper. Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 20-30 minutes, or until the chicken is tender.
  • Add Vegetables:

    • After the chicken is tender, add the diced potatoes and carrots. Simmer for another 10-15 minutes until the vegetables are cooked through.
  • Finish with Bell Peppers:

    • Stir in the sliced red and green bell peppers. Cook for an additional 5 minutes, just until the peppers are tender but still crisp.
  • Adjust Seasoning:

    • Taste and adjust the seasoning if needed. You can add a tablespoon of sugar to balance the acidity of the tomatoes if desired.
  • Serve:

    • Once everything is cooked and the flavors have melded, remove from heat. Serve hot with steamed rice.
