I always crochet with the "yarn over"  (the "V") because that's how my mom taught me, but I love both! Now that I've seen the photos you've posted, since I want to make a little Batman keychain, I'm thinking about using the "yarn under" technique!

I prefer the x stitch but I think for some designs the v suits better

my body automatically wants to yarn over. It takes forever to finish if I try to yarn under

I use the yarn under method (X), but mine kind of look like I was using the yarn over method O_O

I always try to yarn under when working a head or something that requires stuffing, as I find it makes it tighter! But I am more natural doing yarn over!

I recommended for amigurumis the X stitch  and for other fluffy stuff  like sacarles, V stitch

I think V gives it a nice textured pattern while X makes it look like you're pressing them agaisnt a grid
